1. In a pot boil the water with sugar, honey, cinnamon, cloves, orange peel and mastic for 4-5 minutes. Remove the herbs.
2. In a heavy-bottomed pot, burn the oil and slowly pour the semolina, stirring constantly, over low heat, until roasted. Add the raisins and almonds.
3. Remove from the heat and pour in carefully large spoonfuls of the syrup, stirring constantly. Return the pot to low heat and stir until the semolina has absorbed the syrup. Remove from the heat and cover with a clean towel for 3 minutes.
4. Serve in small bowls or in a large mold and let cool off. Sprinkle with cinnamon.

1 cinnamon stick,
5 clove sticks
1 orange peel
½ teaspoon crushed mastic
2 mugs of thick semolina
1 mug of oil
2 tablespoons raisins and almonds (optional)
