1.Whisk the eggs with the sugar.
2.Pour the milk and flour alternately until it becomes a smooth thick porridge.
3.Add the zest and vanilla and mix.
4.In a deep frying pan pour spoonfuls from the mixture and fry in hot oil. Turn them on both sides to brown.
5.Put them on a plate with absorbent paper and then serve in a platter.
6.Pour over Cretan honey and season with cinnamon.
